What's for Dinner, Mon., May 25, Memorial Day

Grilled chicken with different types of sauces.

Tomato salad with mozzarella and basil.

Might try to figure a way to do grilled sweet potatoes as a side.

For dessert, both watermelon and then later, raspberries, blueberries, and blackberries. I might sprinkle some mint over the top with a tiny bit of ice cream or vanilla yogurt.

I am gardening all day long. Big job, getting this garden in.

no idea what is on the menu, but i just made a batch of my broccoli slaw to take with us. however, it turns out the host doesn't like sour cream and the husband didn't mention this until he saw me putting it in the dressing

with a couple of ounces of chips and a toss salad with balsamic dressing.



And maybe a lemonade if I'm not too lazy.

They have been working their buns off over this holiday weekend and deserve a nice treat.

So, it's cacio e pepe to start. This is one of my favorite pasta dishes. It's beauty is in it's simplicity.

Then a simple poached chicken with roasted brussel sprouts and cauliflower.

Desert? Maybe.

Your dinner sounds wonderful. Enjoy!

I'm not only taking care of my garden, I'm taking care of my neighbor's, who is in Portugal for a couple weeks vacationing.

The landscape is so beautiful I feel compelled to do a good job watering. Maybe I can post some pics later.

I have to look cacio e pepe up.

It's looking better and better, but it's an amazing amount of work.

re-fried beans on fresh whole wheat tortillas with shredded cheese, shredded lettuce, chopped tomatoes and jalapenos. Guacamole on the side. Salsa all around. To Hell with the Tornado and Flash Flood warnings!

With grilled veggies on this side. Zucchini, yellow squash, sweet potatoes.

Wife came back from Sprouts with a bunch of stuff, so it's my personal take on Iron Chef
