for people who don't eat pork. You do need to add extra olive oil to make up for the fat in the sausage, a tablespoon per pound.

When I've made posole verde here with turkey instead of pork, it's fooled native New Mexicans who've been eating the stuff all their lives. It's a great substitution.

Mmmm, posole verde, it's finally cooled off enough to start cooking again.
