What's for Dinner, Mon., Columbus Day, Oct. 12, 2015

We're going to our favorite Portuguese restaurant at around 2:30, so probably will not have anything later. For me, it will be sole Francaise.

Thanks, everyone, for your good wishes about my cold yesterday. They must have worked! I rested and didn't push myself too much yesterday, and I felt myself turning the corner very early this a.m.

We're up to having trapped 18 mice now, apparently we were at the forefront of a major infestation. I've been moving woodpiles farther away from the house while trying to locate just where they're getting in so I can block it up. Very frustrating.

A day early! LOL.

I've been CRAVING some good ground beef tacos. I'll keep the leftovers, and probably have taco Tuesday again tomorrow

Leftovers: a cup of cioppino (that should finish it), a cup of beef stew (that should finish it). The last of the sourdough (that should finish it). And if I'm still not satisfied, a salad to boot.

Wow - usually Tuesday's are clean-the-fridge days (since Weds is trash day). A day early!

....and a skillet side of fresh sweet corn cut off the cob and browned slightly with red bell pepper, red onion, and green cherry tomatoes. (Variety of the tomatoes is Frosted Green Doctor and the plant has been very prolific and tasty.) Also some chili powder and butter in that skillet.

I have all the ingredients, so I may try this tomorrow.

Sounds like a great combo--the enchilada with this as a side.

Well, at the restaurant we had fish croquettes first. Then I had garlic shrimp, which came with the usual yellow rice, vegetables (Brussels sprouts, green beans, carrots, etc.). also the potato chips that they make in-house. A big salad with tomato, artichoke hearts, and cucumber.

A pitcher of white sangria.
