What's for Dinner, Mon., Oct. 19, 2015

Tonight I'm making a cauliflower crust pizza. Yesterday, instead of making the Chinese I thought I'd make, I opted instead for roasting the last of the summer vegetables. That is because the house was cold and I couldn't get the face plate off the thermostat to put in new batteries. I eventually solved that problem, but for the short term, roasting those delicious veggies really did the trick, plus my house has the most wonderful aroma!

I will top the cauliflower pizza with the roasted vegetables and mozzarella. Here's a pic of my bowl of roasted vegetables:

Most of the vegetables I grew myself, from the lovely little Japanese eggplants to the herbs that I used in the marinade: in all, red peppers, tomatoes, onions, eggplant, and zucchini.

Sadly, the cold last night left my beautiful eggplant with drooped leaves. As the weatherman said, "The growing season is over."

It was a good day, I got more of the maple cut for firewood, and I got someone else who was interested in the pieces of the tree that were several feet in diameter along to start taking some of the pile that's been sitting next to my house for almost a year now. He got about a third of it, so a few more trips and hopefully all of those pieces that are too big for me to saw up with the hand saw will be gone. As slowly as we go through firewood (since we only use it when we sit out on the patio in the evenings) the maple and cherry we've got now will still last us four or five years.

3. Pork Tacos

We were busy working, so didn't go to the grocery store today. Had roast pork with roast carrots and potatoes left from Sunday. Made a taco filling with these ingredients: chopped everything up plus two cloves of garlic, also chopped. Browned all in a little oil. Forgot to get corn torillas, so used flour tortillas instead. Heated the tortillas, put in some of the filling, folded in half and pan fried them. Made a salad topping with shredded lettuce, grated radishes and chopped tomato sprinkled with a little rice wine vinegar. It was very tasty.

I let the flour torillas get really brown when I was pan fryjng the tacos, I liked that more than a corn tortilla, so will try this again.

Anyway it was a meal, all from the fridge and pantry. Finished with a slice of pumpkin pie with a dab of whipped cream.

Over the years I have gotten lazy and started using the pie crust that is all rolled out and you just put in your pie dish. On my last trip to the store, they were sold out of that type of pie crust. I made my own on Saturday, using Ina Garten's easy pie crust recipe, made in the food processor. It was a good crust, will try it again. I wanted to try the vodka pie crust, but looked at my liquor supply but no vodka. Didn't think gin, bourbon or tequila would work.
