What's for Dinner ~ Tuesday Feb 7th ?

Sorry I missed Monday.
Not a good day for me, but I am doing better now.

I am returning to a soft food diet for a few days, so I think that I will be having an Asiago Dill Omelette tonight.
It's delicious, and doesn't make me want to scream.

i had to use up some things, so i made chicken divan tonite. it was yummy, but a rare treat.

It's a favorite meal when my stomach is in rebellion.
Chicken Divan is yummy, and not something I make since Bill thinks broccoli is evil. My King Ranch is close though.

i've got a sirloin tri tip roast in the fridge, i plan on doing an herb rub and roasting it with some veggies. i started a loaf of no-knead bread last night to go with it.

i haven't really done much cooking for a couple of weeks and it feels nice to be getting back to it.

Bill has been on a Chinese kick, and fortunately he is a great cook. For my lunches, I am going really simple, if I eat.
I want to learn to make good stuffed pastas soon.

If you have any spare bread, teleport some over to me? Homemade bread would be sooo good today!

It's one of my favorite foods but I don't make it that often any more since my wife can't eat it. I think I'll also make a big batch of tomato and vegetable soup tonight. We'll have it for dinner tomorrow and then freeze a bunch for lunches.

I can relate to that a lot. Bill has several favorite meals that just don't agree with me. I usually grab some of the ingredients and make something simple that I can have, when that happens. Win/win for us both.

The soup sounds good. It's been cold and rainy here for days, but the sun is finally out. Still cold though, and a big pot of soup sounds perfect.

I make mine with homemade biscuits on top. Dessert is more biscuits with homemade jam!

It was a long day at work and I wanted to fix something easier, but my daughter and her boyfriend are coming over. He "doesn't like things with sauce" so part of the chicken won't get cut up, I'll just flour and saute it separately. Not a big deal, but I'm glad my kids aren't that picky!

The asiago and dill omelet sounds wonderful, will have to try that sometime.

Hopefully he will grow out of that no sauce thing. There are sooo many excellent things that he is missing!

I have been told that Bill was one of those kids who had to keep ALL the foods on his plate from touching each other. Now he makes tons of one pot meals in skillet breakfast, chili, and Chinese food forms. So there is hope for Mr No Sauce yet!

the omelette sounds yum.

Kids are having penne with red sauce, meatballs and garlic cheesey bread. Not sure what I'm having yet, maybe just some soup or a salad with some grilled chicken breast or maybe a little of both.

I miss grilling a little chicken on my indoor thingy. I used to use just a little sesame oil and whatever herbs I was in the mood for.
One of these days I want to get a big enough indoor grill that I can do panini or a few chicken breasts at once. I've always had a small grill indoors.

Marinated with tumeric and fish sauce then served in a sauce of ginger, garlic, hot pepper, yellow sweet pepper, and tomato to make it sauce-y and served over jasmine rice. French rolls. Easy and D-lishus!

Hope you just keep getting better and better. Your omelet makes my mouth water for cheese and dill!

Edited to add: I also tossed in a double handful of sugar snap peas to the sauce to perk it up and add a little crunch.

And adds a little yum factor to everything it goes into. It amps up the flavor of about everything the same way anchovy paste does. If you can't find it, try anchovy paste. If you do find it, use judiciously.

inspired by trying the venison one a few nights ago.

I wish I'd baked it uncovered longer, I didn't get the chicken as brown as I like it, and if I try it again I'll include the olives I left out. But the chicken was fine and the broth in the bottom was good enough that I have that squirreled away in the fridge for ... well, I don't know for what yet. And we had green beans again.

Ok, so I work late on Tuesdays. And heaven forbid I don't cook pasta on Tuesdays or the world would come to an end for my teens.

Last night was pretty skimpy. Plain marinara sauce, no bread, no meatballs, and a basic salad on the side. I had planned to make some peppers and onions and thaw a few meatballs but since I was late, my husband threw the meal together. Again, I will not complain about that!

We are back in basketball tournament hell tonight so I have to think of something ready to go. Possibly a stew. And if I make biscuits, I'll have some happy eaters.

You made me laugh! I've been curled up a lot the past couple of days and watching The Big Bang Theory, and it sounds like your kids could fit right in with Sheldon's food system. The eat takeout from a specific restaurant each night of the week.
