I'm guessing NJCher got held up doing something important in RL, so I'm going to post this one. I can always drop it again if she pops up
Tonight, we're doing butterflied (boneless) chicken breasts baked in an apple-cranberry chutney, with a side of steamed cauliflower baked just long enough to melt shredded sharp white cheddar into and over it.
It's smelling good, but won't be done for another half hour or more.

With sun-dried tomatoes, red bell pepper, red onion and Mozzarella. I made the dough this morning.

(14,733 posts)We had pizza yesterday. Olive oil, garlic, red onions, green onions, thinly sliced yukon gold potatoes and bacon.

(14,733 posts)The idea was more of a loaded baked potato, but honestly, there was so little potato you mostly got the other flavours.

(35,643 posts)dinner was good, but it wasn't. It was a catered affair, so large there were two caterers engaged, and neither one was very good.
So maybe I'll have an orange for dinner later tonight and hope I can forget it!

(14,733 posts)Catered food always seems sort of sad. I assume that's because of the difficulties of pre-cooking, then transporting and keeping things warm while fighting sogginess, drying out, and so on.
The chutney'ed chicken was pretty good, though I'm not sure how to describe the way in which the flavour surprised me. Maybe that it was both a bit more spicy and a bit more 'earthy' than I expected at the same time. It's been so long since I'd had chutney of any sort that I'd basically forgotten what it was like.

(14,733 posts)I've got my food mill, I've got my apple trees. I just have to be better this year about bagging the apples after they've been pollinated, before bugs can lay eggs in them, to protect them throughout the growing season.
