We're going out to a relatively new Irish bar in the 'hood tonight, but this evening it will be something light, as we had a big mid-day meal--shepherd's pie. Raw asparagus with olive oil drizzled over, salt and pepper. Very easy, very delicious.
For dessert, brie and apple slices with pecans and cashews.
Cote du rhone, which was outstanding.

(5,997 posts)16 oz Diced potatoes - cooked in skillet with oil w/ 2/3 cup each red/green pepper, onion, 4 cloves garlic
Cilantro and green onion
Chili powder, cumin, salt pepper,
24 oz Trader Joe's Vege Chorizo - added to heat up after all of the above are cooked.
shredded cheddar
Wrapped in Trader Joe's Chili and Onion Tortillas
16oz Tomatillo enchilada sauce poured over top.
Baked 35 minutes at 400'
Arroz Amarillo
Refried beans
Ghost pepper salsa (Renfro's)

Good to be eating again! I had a bout of food (poisoning?) since late Sunday. My guess it was something like salmonella. Threw out anything remotely bug-worthy from the fridge.
Seems like I'm over that finally. And wouldn't you know, I'm on jury duty all this week. (Read as: where's the closest bathroom, Judge?!?!)
