(60,009 posts)We are making a roasted tomato sauce, adding lentils for the last hour - serving on a mix of whole wheat pasta and spaghetti squash, with broccoli.
Heading into the last week of the Engine 2 challenge....going to blog many of the recipes we've used.

(Answer: scrambled tofu on sprouted corn tortillas...from the lunch I didn't eat!)

(20,234 posts)I've been on a low carb diet since August. Inspiration and variety are running thin. I've tried a few things on here because I saw other people making them (Moroccan venison stew, thai fish) that I didn't even know existing. I'm grateful for that.
Regarding your question, I am on the diet precisely because I am "eating to live."

So we're having Liver and Onions, mashed potatoes, and some spinach and garlic quickly cooked in a little EVO

(135,060 posts)heavy on chili powder, garlic and cilantro over brown rice. I call it Peruvian sauce and my kids love it. I add a bit of cumin to mine at the end with a dollop sour cream.

(9,791 posts)Prime rib done medium rare, mashed potatoes with gravy and California mixed vegetabes was my choice. We shared a slice of chocolate peanut butter pie for dessert. It was excellent and the bartender at our favorite place makes the best VO Manhattans.

(51,907 posts)Rubbed with a mix of sage, marjoram, Celtic sea salt and coarse ground pepper. Fried, and pan deglazed with a small can of apple juice after frying a bit of minced garlic in it. Volume reduced and corn starch thickener for gravy.
Served with green salad and homemade ginger/basil/lemongrass/garlic/orange dressing.
