Shrimp Turkolimano--Tasty! One of my signature dishes

A gem of a recipe
I found this in an old cookbook that's been out of print for years. It's simple, tasty, and will produce a slew of compliments.

Ingredients
2 pounds shrimp, shelled and deveined
1/2 c white wine
1 t oregano
1/2 t pepper
4-6 tomatoes, chopped
1/2 pound feta, crumbled
parmesan cheese, grated

Escargot butter:
olive oil
2 shallots, minced
2 cloves garlic, minced
2 T chopped parsley, chopped

Directions
In a small saucepan, heat olive oil and saute shallots, garlic, and parsley. Set aside. Campine the remaining ingredients (except the cheeses) in a shallow, ovenproof pan. Mix in the escargot butter, and top with the feta and parmesan. Place under the broiler and cook for a few minutes until nicely browned. Serve over rice of your choice--I prefer Basmati.
