I'll cook up a chicken pattie in the toaster over for a sandwich, with lettuce/tomato/mayo. Then, probably pick around the fridge for "salad in a jar" (marinated veggies). It's still above 100F here, so maybe some of that white wine I've got hiding in the fridge.

Not feeling like firing up the oven or grill today. Besides, I need to hit the market tomorrow anyway, and grocery shopping always inspires me. I do have some wonderful red bells to grill up, which I'll do tomorrow. Great for sandwiches.

and have a ton of veggies .. no rice ( still doing low carb in 2 weeks have gone from 235 to 220
so I am a very happy camper)

5. decided to make more chicken meatballs

I mixed them up yesterday, but only baked about six of them, so tonight I baked the remainder. In the mix, I used fresh dill from my garden and lots of garlic. Panko for the breading, and then I baked them using the convection oven setting, which only took 20" to finish.

They turned out with a golden-brown crust. Flecks of dill visible. So beautiful!

To go with, a dipping sauce of mayo and feta cheese.

Then the salad! Chopped salad with almost every imaginable vegetable: purple and light golden carrots, garlic chives, scallions, cherry tomatoes, Japanese cucumber, red cabbage sliced on the mandolin. Greens from the garden. There is nothing like a fresh salad--if you're a gardener, you know! .
