Chicken satay
Pepper-onion kabobs to go with above
Cucumber salad
This is going to be so easy because I'm doing the chicken satay in the slow cooker. I'm not even making my own peanut sauce, as I have a jar of it from Trader Joe.
I'm going to blanche the peppers and onions and then broil them.
Raspberry swirl cheesecake for dessert.

p.s. tip: check out your Whole Foods to see if they have boneless, skinless chicken thighs on sale for $2.99. All their chicken is free-range, so this is an excellent buy. I picked mine up yesterday. Yes, they are big packages, but you can always freeze some.

(2,302 posts)Cher, your whole plan sounds delicious.
I am taking a break from chicken soup -- for soft-boiled eggs and toast!
I did ask at the doctor's today, about how long my chemo-taste-thing would last, because I'll have to do one drug for an additional year, and I was assured that one (heparin) does NOT affect your taste buds. This means that I could be getting back my sense of taste by the end of July (I started early April). Pizza. Chocolate. Pastrami. Ad infinitum.....

Just canned salmon, cucumber, celery, scallion, some sliced radishes 'cause I have them, dressed with some homemade ranch, a little sour cream and plain yogurt, extra dill, and macaroni ... perhaps not the most gourmet meal in the world but tasty and it's nice to come home to something cool and ready after work.
