What's for Dinner, Wed., June 15, 2016

I have chicken in the slow cooker now, along with vegetables like celery, carrot, garlic chives, bay leaf, and even some of my vegetable stock I made from garden leeks and other vegetables. In another slow cooker, I have spinach-feta pork sausages. I may put this with the chicken when serving, just to spice it up a bit.

I also have a couple cartons of Baby Bella mushrooms, so I'm going to look for a sauce to make using them. Upon serving, I'll put it over the chicken.

My meatloaf from yesterday turned out to be so delicious. It will be nice to have for lunches, etc., for the rest of the week.

...I just discovered cold-brewed coffee!
As I said before, I'm going through chemo, and my digestive system is super-delicate for most of my three-week cycles. It was suggested to me that I give cold-brew a try, as it's supposed to be lower in acid. I used some of my Starbucks Verona to make some in my French press, and wow! It tasted really delicious! I'm waiting now to see if I get any repercussions, but so far so good!
Now if I could make myself drink it in the morning...but I must do the hot stuff then.
Just to stay on track, dinner will be a plain burger and a small baked potato.

roasted baby red spuds w/ garlic. I think I might just add Brussels sprouts to the potatoes and roast them all together. Apple sauce on the side for dippin'.

Off to the Inferno (aka - Phoenix) tomorrow. My task is to come up with things to cook while on the drive out. Fried eggs on a rock comes to mind...
