What's for Dinner, Mon., Oct. 17, 2016

Meatballs in cabernet marinara sauce. So glad I made this over the weekend and expressly because I knew the early part of the week would be very busy.

Lacinato kale, which I would like to make a massaged kale salad with, but lack of time will just turn it into a ribboned salad with lemon and olive oil over the top. Still very good! I got this tip from a cooking show, where it was recommended as a topping for pumpkin soup. Works just fine on its own!

Describe a "massaged" salad to me. My back could use a massage right about now...I never thought about a salad needing one

Doesn't massaged sound much better!?

It's when you put olive oil on the leaves and squeeze them a little here and there. It takes the toughness out of the leaves, although the kale I had wasn't tough at all.
