What's for Dinner, Wed., Dec. 7, 2016

RG’s landing at 6 or 6:30, so we’re going out to dinner. I am going to try to convince him to try a new restaurant. Never an easy task. He has his favorites, and he’s discerning, so this is difficult. I want some Indian food. Haven’t been to an Indian restaurant in ages.

Want to report back on my sweet potato endeavor last night. It was so good–this is going to be a staple with me! I used this recipe for coconut cream sauce and I already had curried onion jam in the frig.

I split the baked sweet potato and mashed up the inside. I then put on the onion jam, and using a soup ladle, put the coconut cream sauce over the top. I had toasted cashews, to I sprinkled that and some basil/olive oil mixture over the top. SO GOOD!

I think a good way to think of this, though, instead of as a sweet potato, would be as a soup.

that for a project. I love to make jam/marmalade as well as pickles and relishes. Only problem is that many other family members do the same, so I don't have an outlet for them. Need to research those "small batch" cookbooks. My pickles and relishes tend to lean heavily towards curried recipes.

Hope you get your choice and have an Indian dinner tonight.

We will be having: leftover lima beans, leftover potatoes, leftover dressing, leftover sauteed cabbage.

Tex-Mex style, with sour cream and taco sauce dripping down the arm.

Beyond that, I haven't a clue.
