Related: About this forumPotato salad recipe (everyone's got one). This came out good -
Red and white potatoes, coarse chopped.
Red and sweet onions, coarse chopped. (Half the bulk of the potatoes)
2 - 3 slices Bacon.
Celery, coarse sliced, and Radish, coarse sliced. (Bulk equal to the onions).
Dressing -
Mayo.
Ground horseradish.
Black pepper.
Dill.
Topping -
Chives.
Basil.
Celery leaves.

Boil potatoes till just tender. Drain and chill.
Sautee onions and bacon till done, almost browned. Drain and chill.
Toss all with the celery and radish.
Blend mayo with spices to taste. Add others to taste - I like some garlic or paprika here.
Toss with the mayo dressing, set out with the green toppings.
Best at room temp, but as always - Refrigerate left-overs. ~ pinto

(111,140 posts)Mine uses all red potatoes, scallion chopped celery and chopped red onion, minced parsley, and a dressing of half and half sour cream and mayo.
The secret is to cut the potatoes and sprinkle them with cider vinegar while they're hot, then cool them down before adding the other stuff. Hot potatoes absorb every single drop of the vinegar.
People tend to groan, roll their eyes and tell me it tastes like summer.

(106,886 posts)I usually blend in sour cream, just didn't have it on hand today. Glad you mentioned it. I really like potato salad to have some tang to it.

(50,130 posts)Two things I really don't like regarding potato salad: commercial/store bought or sweet pickles.
And while I prefer my own (based on my grandmother's New England recipe), I'm open to try others except for store bought or with sweet pickles.
I never heard of sauteed onions in potato salad!
And do you mean ground horseradish, or grated?

(106,886 posts)Sauteed onion is a new one for me too. I've become a fan of caramelizing them for salads and sandwiches. Get them to just about burnt, drain and add to a simple salad, tuna sandwich, a burger is a natural and the off-the-wall combo - PB&O.
Sauteed red onion in peanut oil, browned and drained. Use a heaping to make a PB&O on rye. Peanut butter, onion and rye bread. It's really good.

(9,791 posts)Red potatoes boiled with skins on. Skins removed while potatoes are warm then bite-size cubed. Fine chopped onion and celery and medium chopped hard-boiled eggs added and tossed to evenly distribute. A 1 to 2 ratio of sour cream to mayo mix poured over and tossed until well coated. Add a generous sprinkle of paprika over the top of the mix. It's time consuming but well worth the effort. I'm now hungry for some potato salad.

(6,996 posts)As a great substitute for mayo I've been using Hummus made smoother with tablespoons of plain Yogurt in dishes just like this. For even more zest try the flavored hummus like Roasted Red Pepper or Basil & Tomato.
