What's for Dinner, Thurs., Feb. 2, 2017

Pork, noodles, kale, and avocado soup, topped with an egg.

I was flipping through my new Prevention Magazine when I saw this this section of recipes called "Super Bowls." They are kind of like Asian soup bowls, but not restricted to that cuisine. One is called Bacon, Egg, and Kale in a bowl. I'm going to make that one, only use a breaded pork chop sliced thinly instead of the bacon. I will also use noodles instead of rice. In addition to all that, the recipe shows chopped avocado, and I have a beautiful avocado which appears to be at that perfect state of ripeness. Chopped chives will top it, as well as a poached egg.

It will be easy and sounds delicious. I'll either use some of my own frozen stock or break open a box out of the pantry.

p.s. I looked at Prevention's web site to see if they featured the pics for these bowls there, but they didn't. Too bad, because they all look delicious.

with a mushroom risotto. Roasted asparagus with olive oil and grated parm reggiano.

And wine. I need the alcohol break today.
