What's for Dinner, Sun., Feb. 12, 2017

Pasta fagioli and polenta. The polenta has all kinds of interesting cheeses in it. Also ham from a ham hock and chopped bacon.

Tossed green salad, which is baby arugula.

Dessert: Valentine cookies and candy.

1. Pulled pork with BBQ sauce

The pork I cooked overnight turned out fine. It was in the crock pot on low for about ten hours. Next time I'll see if I can cut in half first to let the juices circulate better..

Making some coleslaw in a bit and considering a sweet potato as well. I just spotted a tossed salad in the refrigerator that TJ must have made overnight.

It's a springlike day here in Virginia!

2. Chicken and broccoli clay pot

Brown chicken that has been covered in flour, S&P and tarragon and put in clay pot. Put left over flour in skillet and add sour cream then pour mixture over chicken add cheddar cheese. In last ten minutes add broccoli and more cheddar cheese. Boil egg noodles and lay chicken and cream mixture over noodles. To die for. This is my son's favorite Sunday meal. I love cooking with the clay pot. Chicken is always moist and juicy.

Keeping it simple - S&P and granulated garlic. That's it. I think I'm craving the smokiness of it all. Just can't get that when done in the oven. Made a classic spud salad this morning. Steamed broccoli w/ blue cheese dressing. And... whatever comes to mind this lazy Sunday.
