What's for Dinner, Wed., Feb. 22, 2017

Raw vegetables (actually, they will be blanched) mixed with creme fraiche and some other type of cheese.

Salad is chopped endive. It has balsamic/olive oil dressing.

There's another salad with the freshest asparagus I ever tasted (from a store). It is an arranged salad and has two types of tomatoes alongside it, along with egg salad. The tomatoes are Kumatos and some type of preserved tomato from a jar. It has a very intense flavor.

For the main course, filet mignon.

Dessert will be a couple chocolates from the box the RG brought me on his way back from Argentina. They are from the duty-free store and look delicious! I have my eye on this one shaped like a star. The exterior is chocolate and the interior is white chocolate.

2. Just made cod fish cakes

Made with mashed spuds, onion, celery, bell pepper. They are setting up in the fridge now. I'll dip 'em in egg wash and coat with panko before pan frying them. Not sure what else to serve, but there's plenty of time to decide.

I am thinking of making an orange hollandaise sauce to drizzle over the top, though.



Edit: I forgot I have leftover roasted asparagus from yesterday. That'll work.

It is six layers of veggies and cheese with an egg custard. I baked it in a 3" deep spring form pan. I'm adding salad with a vinaigrette and olive oil dressing. it's done.

My dumplings are the rolled out kind from an old recipe from my grandmother. Basically you just make biscuits and then roll the out flat and drop them into a boiling pot of chicken soup. MMMMM

a mustard vinaigrette. Green beans. Red potatoes with garlic & olive oil. Leftover spinach casserole from Sunday dinner.
