but I use olive oil rather than butter and just a splash of lemon juice instead of the zest.

One ingredient not to skip or change is the parsley, although you can use curly parsley. The reason for this is so you don't have as much death breath the next day. The chlorophyll in the parsley really cuts down on it along with adding a nice flavor to the scampi.
