So I made a 6.56 bone in pork butt roast and have considerable leftovers...

I was thinking of making some of it into a pulled pork bbq, but since I already have some of that in my freezer, I wanted to try something else...maybe enchiladas?

At any rate, I have LOTS of leftover other stuff that I have to turn into other things (have some broc and cauliflower and carrots I want to use up, and some chicken to turn into pot pie? salad? and some ham which is becoming scalloped ham and potatoes) so the easier, the better...

What do you all make out of your Boston Butt that isn't pulled pork bbq?

Take some of your leftover pork, shred it. Add some chili powder, cumin, some salsa verde and serve on a warm flour tortilla with cilantro, sour cream and a squeeze of lime. Heaven.

So easy. Get some tortillas, seasoning (cumin, a little chili powder, garlic, what ever). Make up some black beans and rice, as a side dish.

I'm actually making this for my brother's birthday, in a couple of weeks, but I marinate the pork in orange, lemon, lime juice, fresh garlic, onions, cumin and chili peppers and then slow cook it for about 18 hours. Absolutely amazing

Pork and cabbage soup is to die for.

Hot pork sandwiches with gravy.

COLD pork sandwiches with mustard (so good).

Pork tacos (I like the enchilada idea).

Stir fry... instead of using beef.

one for future casserole
and so on - solves a lot of my left-over problems
