I think I am going to try a mixed Mexican Cheese Omelette today. I have been eating VERY lightly, but eggs sound good.
I love my Asiago Dill Omelett, but am out of Asiago, so I am going to try a blend I have on hand.
It is Sargento's Artisan Mexican Blend and we have loved it on everything we've tried it with. It has Queso Quesadilla, Asadero, Queso Gallego, El Regalo Anejo Enchilado and Manchego cheeses. Yummy stuff.
The omelette rocked. Had it with a little hot sauce. Yummmmy.

(22,271 posts)what I call the "Mediterranean Dinner" from yesterday. Stuffed grape leaves, pita bread, tabbouleh, hummus. salad and rice pilaf. I made the grape leaves but I bought everything else from a specialty Mediterranean deli about 2 blocks from my house. They may WAY better tabbouleh and hummus that I can ever make and the pita bread and grape leaves were made/grown/packed locally.
When I cook I usually cook enough to eat off of for the current day and 1-2 days afterwards. I know not everyone likes leftovers but we're fine with it.

Unless you want ham, steak or chicken, it's crazy hard to find.

(31,170 posts)We don't make it often, because our chicken usually ends up in Mexican or Chinese dishes, but I do love good Chicken & Dumplings!

I ate my omelette early, and added hot sauce. Even with the dill and mexican cheeses, I still had to give it a little kick!
It was fine without it, but I put it on everything!

(3,744 posts)I didn't feel like cooking after I rearranged a bunch of stuff in the kitchen due to getting a new microwave/convection oven. Today I feel like cooking! Also I'm cooking roast brussel sprouts and fingerling potatoes. Yum!

(31,170 posts)I haven't used a convection oven yet. I had thought about getting one when we built, but we bought an induction cooktop instead.

I was in NOLA last spring and my sister had a big boil with all the fixings. I am sure she will have another tomorrow.

And I'll dress it with Trader Joes Fat free Balsamic.
So it will be a sort of Greek Panzenella, Nicoise
Anyhoo...It's my favorite easy dinner salad...

(5,649 posts)I am Diabetic, so crap like Hamburger Helper is out. However, we are trying to make Cheeseburger Macroni with Dreamsfields pasta, cheese and hamburger.
With a fresh made salad made from veggies my husband got from the local farmer's market.

I don't think he "didn't like it" as much as "didn't like it as much as I did". He's the one that made it, though, and he's always his harshest critic!

(135,060 posts)T-man had meatballs and pasta around 4pm. Madster had an ice cream cone after soccer practice then bbq chicken, corn and cucumber salad. T-man also enjoyed some chicken and a bit or tow off of one of the cobbs. I had some left over pot roast and a salad. It's like a hotel room service here most nights.
