Whats for Dinner, Sat., Mar. 18, 2017

Some type of dish with chicken breast, fresh spinach, lemon, and pasta.

I'm making cucumber salad from little Persian cukes.

Dessert will be something a guest left last night: so good--apple squares and cheese pastry squares. We mostly had the the Stout cake last night, but these were also good.

With your typical dumpling restaurant table sauce-- soy sauce, Zhenjiang vinegar and Hong You- home made chili oil ..

Plus--- umm.. something else... maybe a spicy cucumber salad...

I am not sure if that's what's for dinner, but I'm proceeding under that assumption.

The beans are simmering in a pork stock from the freezer. The beans have a lot of ham, some celery, onions and garlic, but no carrots. No carrots, because I don't have any.

Seasonings are whatever was in the pork stock plus garlic, thyme, bay leaves, pepper and chili powder. I'll need to adjust seasonings once it has cooked some.

Sides are salad greens and garlic toast.

There is a nice aroma already filling the kitchen although there are hours left on the cooking time.

Caramelized onion pizza. We normally go on a date on Saturday but I have no energy today.

Psst - homemade pizza and my husband's homemade prosciutto and mozzarella.

It's tasty and since my joints are achy today, I don't have to stand on front of the stove or chop a lot of veggies, so it was a simple fix.
