What's for Dinner, Wed., Mar. 22, 2017

Corned beef, which will be warmed up from the St. Pat's Day party. To go with it:

--sour cream horseradish sauce for the corned beef. I bought a horseradish root yesterday!
--apple, dried cherry, and almond coleslaw
--zucchini and yellow squash rounds, dipped in egg, breaded with thyme, parmesan, and panko

Dessert: a slice of lemon pound cake with topping. The RG made the topping, so I can't really say what's in it but it's creamy. On top of that, I plan to mince some dried ginger and sprinkle a few raisins, which have been marinating in orange juice.

It is cold and windy here, and I'm happy I have all these ingredients and that I don't have to go back out.

with a saute of (Mexican) grey squash, onion, mushrooms and tomatoes. Probably with some sort of rice. That oughta clean out most the fresh veggies in the fridge. Off on a road trip to PHX for a spring training ball game!

ps: The irony of driving 300 miles to see the Dodgers, while their home stadium is only 60 miles away from my place is not lost on me!
