What's for Dinner, Thurs., July 20, 2017

Cold pasta fagioli with tuna on top; also chopped red onion, basil, and parsley.

Glass of white wine.

For dessert, a nut bar on which I will put caramel sauce.

with toasted sourdough rye bread and butter.

Some salad later after it cools down (the weather, not the salad).

Followed by

Tea and cookies ... just think, in about 6 months I'll have cocoa and cookies instead.

Totally unexciting, but I look forward to a refreshing dinner after the last few heavier meals.

With quinoa and garlic sauteed kale. Some spiked seltzers that my wife requested. Never tried them. I'm a little skeptical. Lol.

5. Tacos/ taco salad.

I canned 16 pounds of ground beef today, froze 5 pounds of patties, and have about 2 that's cooked but wouldn't fit in the canner. Since it's pre-crumbled, it becomes taco filling.

Spouse still eats tortillas. I don't, so spouse gets tacos, I have it as part of a salad.

And I'm done canning until the green beans and tomatoes get plentiful (another week or so, for local.) Yay, I can stop hanging out in the garage!

Grilled Nathan's HotDogs, Tony Pack chili,lots of onions, spicy brown mustard and a grilled ear of corn w butter & seasoned salt. Watermelon, maybe later. ::burp::😳

I used to get their sweet/hot pickles/peppers all the time!

Years ago, I had an online acquaintance with a woman who was either a Packo or married one and worked there. Don't remember now. Anyway, she sent a number of us gift boxes from Packo's and it included a couple different kinds of pickles and a big pickle key chain!

I've never had their chili.

Deep fried breaded thin pork tenderloin on a bun with mayo, lettuce, and tomatoes. First corn from Olathe Colorado--delicious.

Hauling big bags around and up and down...really hot here in Northern Ohio. I cooked chili lime chicken in the pressure cooker. The chicken was season with jalapeno, cumin, oregano, chili powder etc. (whatever you like) . I also used the pineapple juice from the canned pineapple. Did a quick fry at high Temp to blacken it a bit. I made homemade pineapple salsa...just used canned pineapple as I didn't have fresh but with onion, peppers, homegrown tomatoes and avocados. I served it on rice with black beans (rice bowls) or in gluten free wraps. It turned out really well.
