What's for Dinner, Sat., July 22, 2017

It's so hot here that I don't even want to go outside, so I've been doing cold salads for later. I just finished a red and gold beet salad. The beets are in dressing made of apple cider vinegar, olive oil, and some agave. There are also tangerine bits in the salad. To sprinkle over the top, tangerine zest and chopped peppermint.

Next up may be Asian Peanut Slaw or perhaps I'll just do a chopped salad.

I also want to make up some tea to chill for the week. I have Earl Grey, and, of course, I could do a tea from the lemon balm in the garden.

Soon the RG will be home and we will resume our "Breaking Bad" addiction while enjoying delicious summer food. We are on the last season of BB. . Then I will have to find a new addiction (I think it will be Season 3 of "Better Call Saul.&quot

but there are no burn bans, which is a rare thing this time of year in OK. Time to fire up the grill! Tonight we are having a wedge salad, grilled trout with lemon potatoes and melon for dessert.

2. Jambalaya

I made some Jambalaya, to eat early this afternoon.

I used RO-TEL Original tomatoes with chilies today.
I didn't need Cajun seasoning and only used garlic, bay leaves and salt.
As an after thought it could have used some thyme.

It tastes great.

salmon salad and gluten free crackers and fresh peaches from either North Carolina or PA...not California ones which are tasteless this year even when they seem ripe. The peaches were very good.
