Baby arugula salad with parmesan cheese, cherry tomatoes, and toasted walnuts. Using olive oil drizzled over for a salad dressing.
Shrimp combined with corn, herbs, and a cayenne pepper from my garden. Served over couscous, and there's a shrimp sauce to put on top, too. It's a beautiful orangy color.

(2,016 posts)made with pork. This is from a rather large batch I made a while ago, and froze the leftovers. Hopefully, the freezer didn't make it "mush". Tortilla chips for scooping, lime wedges for brightness.
