What's for Dinner, Wed., Sept. 6, 2017

Rainy day here, so no cooking out on the grill. Steak, cooked in a cast iron skillet.

Zucchini-corn fritters.

Roasted beet salad with feta cheese and garden greens.

Dessert: Mint tea and lemon biscotti.
aaaaand...an episode of Sneaky Pete on Amazon!

on flour tortillas and a bed of refried black beans, pico de gallo, and a touch of home made salsa ranchera.

Tex-mex style tacos, blue chips with white queso, nopales salad with cherry tomatoes and radishes.

I mixed jasmine & brown basmati rice & kidney beans, garlic& onions and some yellow squash cubes into a yellow pepper, tomato sauce then a sprinkling of cheese on top.

5. Meatballs

With fresh herbs and fresh parm cooked in garlic infused olive oil. No sauce tonight because I have an ear of corn to eat before it goes south. And some baby zukes just picked from the garden. That will be enough.

Tomorrow the leftover meatballs, pasta and sauce. Yay a 2 in 1.

Fresh Mandarin oranges for dessert. Maybe some Matcha tea.
