Probably will not be able to do much cooking. We have some soups and I can make sandwiches, but I generally have no appetite in conditions like these.

It looks like it will go on through the night.

We are in one of the most protected coves in Southern California, so are at low risk of serious problems.

But there are issues of comfort and the ability to do routine things that get to me after awhile.

I made it with egg beaters, non-fat greek yogurt, cheddar, onions, peppers, and artichokes. It was the first time I tried using yogurt and I was really happy with the taste and consistency.

I have the fixings for fresh pico de gallo, and I had some cod in the freezer. I will bread it and bake it. I'm not going put the traditional cabbage on it. Just lots of the pico de gallo.

sides are grapefruit and some leftover vegetables. I made the cheese sauce with sharp cheddar and parmesan. Bread at our house is pretty much always whole wheat bread, baked by a Bosnian baker, $1.50 a loaf. Tasty and filling. Unfortunately the baker is trying to sell his store/bakery and I guess I'll have to start making bread myself then.

The two teen boys ate their portions quickly and without complaint.

Onions, roasted peppers, zucchini, celery, carrots and potatoes cooked with Greek Spice and a can of chopped tomatoes. I made it yesterday so It sat overnight in the fridge. I'll probably throw some baby spinach in it when I heat it up and if it looks like it needs it I may throw in a can of beans from the pantry.

zukes, onions, garlic, leeks, yellow squash, added a can of tomatoes and italian seasonings, cooked in chicken broth. I added a can of white beans and some grilled red peppers. I'm glad there's a lot of it. It is flavorful and filling.

Those frozen tomatillos and green tomatoes from last summer started simmering, and I added some slices of hatch chiles from freezer too, and some frozen red cherry tomatoes too. A cup of chicken broth to cut the sweetness from the tomatoes. Diced red onion, cumin and some black beans went in next, and a garlic clove. Then chunks of cooked chicken left over from a roaster, a handful of cornmeal for thickening. Some chipotle taco sauce for an extra flavor boost.

Simmering now, and cornbread is in the oven. Sour cream and avocado on hand, and grated cheddar and diced scallions.

place it on a baking sheet, then bake 30 min to 1 hour at 350, crank it up to 375 for the last 15 min.

Crispy on the outside, juicy inside.

It's easiest with same size pieces, I used thighs this time.

Since you're short on space, try this..
Marinate the chicken for 24 hours in buttermilk and a little lemon juice. pat dry.
cut cold butter into a little flour and what ever spices and herbs you like. You want it cut up almost to a mealy consistancy.
press the chicken parts into the mixture, you want it to cling to the meat as much as you can. put it on a baking sheet (with a rack to hold it out of the juices) into a 450 oven, 10-15 min until the butter is sizzling and browning, then turn it down to 350 and bake till done.
I do the marinating and coating in gallon zipbags to contain all the mess

I usually use boneless/skinless thighs. Dip in egg and then seasoned bread crumbs and bake in the oven (my granny used to make it all the time). It gets nice and crispy. Since hubby had a heart attack I have to be careful about frying and butter and stuff.

Both he and my son love it. Sometimes I'll add cayenne pepper and have spicy chicken sammies. Yummy.

so I went with a big salad with romaine, bacon, turkey, avocado, green pepper. I added in some goat cheese (a small diet cheat) and when I tasted it, I realized I had bought the honey-flavored goat cheese without knowing it. So I turned it into a big cheat day salad, with sliced apples (omg, I haven't had an apple since August!), raisins, pecans, it was great. I topped it off with some cream cheese filled cinnamon sticks to spike the calories the rest of the way.

Rubbed with sage, thyme, sea salt, pepper and garlic powder. Pan-fried in olive oil, and then deglazed the pan with a small can of apple juice cooked down for a sauce. Served with salad and ginger-orange-garlic dressing.

It's not really that hard and it's really good. But Cook's Illustrated can be a little pretentious. Their eggplant Parmesan recipe would drive a vegetarian to veal.
