Appetizer: sushi
Main course: Grass-fed beef and pork meatballs, spicy. Have thinly sliced vegetables, which are deep fried, as a topping.
Salad: Chopped salad with vegetables like carrots, red pepper, red onion, and roasted tomatoes. I got up very early this morning and roasted a pan of tomatoes, and did they ever turn out good! Top with dill-feta cheese yogurt dressing.
Dessert: miniature apple strudels. I'm making cream cheese-raisin topping for them.
Last night I had the chocolate dessert that looks like a sailboat! It was beautiful, and oh so delicious!

(26,177 posts)stuffed with fresh sage, rosemary, thyme, onions, LOTS of garlic, celery and carrots. The juices made for some amazing gravy. I made some garlic mashed potatoes, and baked a sweet dumpling squash.
Tomorrow, most of the remains of that chicken will end up in the slow cooker, and there will be SOUP for the chilly weekend!

(32,828 posts)I mixed black beans, peppers, corn & sazon spiced con culantro y achiote rice, which was a lovely & suprising orange color. I made a pico de gallo to top the enchiladas.
