I have a new steam oven Id like to use for the turkey, so I can leave the main oven free for other stuff. The plan is to season the turkey, stick a thermometer in it, and stick it in the steam oven at 400 degrees until done. Should work except I have really no idea how long my 12-lb bird is likely to take. It will take less time than a standard oven, I just dont know how much less time.

(37,319 posts)Steam (superheated) at atmospheric pressure and 400 deg F has an enthalpy of 2875 KJ/kg and Air has an enthalpy of 480 kJ/kg
On the face of it steam would have a heat content nearly 6 times air. But the oven is not likely to have 100% steam.
The book should have some info on the time difference. From what I can find it looks like it takes about 6 minutes per pound.

(15,088 posts)But a four-pound chicken took over an hour at 400, so I dont see how a turkey will cook in 90 minutes at 325. I have visions of hungry family staring T the oven waiting for the turkey to be done already.

(3,268 posts)Is your oven a Thermador? Have you looked online for guidelines if your manufacturer is different? Otherwise I guess I can't help. Sorry...
