What's for Dinner, Wed., May 9, 2018

First up is a cold snack plate with miniature ham sandwiches with mustard-mayonnaise, cherry tomatoes, and thin slices of onion on pumpernickel. Also beet hummus with lemon. Using red pepper slices and triscuits to go with the hummus.

Later, much later, due to gardening until dark, will be a plate of pasta with tomato sauce that the RG made. I think it may have sausage and vegetables in it.

I made a sparkling water spritzer with pomegranate & cherry juice for the beverage.

2. Rosemary pork tenderloin with a sauteed vegetable medley.

Pork cooked sous vide at 138 degrees for two hours then browned on the stovetop. Zucchini, red bell pepper and red onion sauteed in rosemary compound butter. Pino grigio with dinner.

Later, a large scoop of Blue Bell French vanilla ice cream with raspberry chipotle sauce, fresh strawberries and mint.

3. Pineapple and shrimp curry

with rice, but there's a lot of the coconut milk broth, so it ends up kind of a soup.

During the week, my son cooks, since my workdays are pretty long/kinda late. This is a favorite of his, he does a good job with it.

4. We had BBQ beef ribs with corn on the cob, gelato for dessert. No gardening for me lately

caught the beef for $2.99 at WINCO; really nice rump roast.
