What's for Dinner, Sat., May 19, 2018

On edit: adding an appetizer of chicken liver spread on baguette slices. A friend stopped over with this and needless to say, he was invited to stay for dinner.

My mustard spinach salad was a big hit with the RG, so he asked me to make it again. Trouble is I'd have to drive to the community garden 'cuz that's where my mustard spinach is growing, so I asked him if he'd be happy with green ruffly, of which I have some that needs cutting. Affirmative, so this will be the most beautiful lime green ruffly leaf with red onion and chopped cucumber. The dressing will be very lemony and with plenty of mustard and garlic. I dug up some fresh garlic just for this purpose. I might add green olives or feta cheese crumbles.

Main course will be shrimp and grits.

Dessert: If I can't find a good low- or no-sugar recipe, it will be red grapes, sliced apple, and goat cheese.

from the local taqueria. And cervesa.

My kitchen is still in disarray after an upstairs plumbing leak destroyed the (downstairs) kitchen ceiling. Hopefully, it'll be finished by Monday night. If not, I'll have to cook in weird contorted positions around the scaffolding.

I'm not really sure what is except crushed onion crisps, avocado & radish. Sushi in Ohio is a long game played with energy if not with correctness, outside of restaurants.
The wasibi works though.

TJ is making Lasagna and garlic bread. Meat, bell pepper, mushrooms, etc.

I want to add a simple bell pepper, tomato and lettuce salad. Simple because we don't have many ingredients.

We've been busy with the four legged food critic who got home from surgery yesterday afternoon. He is not a happy camper in his cone and he's angry at the world. He hurts, but it seems much less today. We are hand feeding him. Dreading trying to do physical therapy with him with the mood he is in.

His menu (you might have guessed already) is "mini cheeseburgers, no bun please!" Temptations cat treats for dessert, his favorite "cookie." They are just the right size for this tiny Pom.

(was raining so we didn't grill), a salad of butter crunch lettuce with radishes and carrots and home made ranch dressing made from crème fraiche, champagne vinegar, and herbs, and homemade potato salad, the making of which, according to my son, is one of "life's noblest endeavors"

7. Curried chicken salad on wheat

Such a simple recipe, but so good. Although you must like curry

1 large tender cooked chicken breast
1 TBS cream or milk to moisten
1 TBS veg or olive oil
1/4 cup mayo
1/2 tsp curry powder
s&p to taste

Chunk the chicken into a bowl. add the rest of the ingredients and mix with a fork to the texture you prefer. Makes about 2 cups.
