What's for Dinner, Mon., Nov. 12, 2018

Stuffed peppers. Using ground beef, celery, onion and tomato sauce. Lots of cheddar cheese.

Sliced cucumbers (using the mandoline) with dill and sour cream. A bit of red onion.

Dessert: red grapes with vanilla yogurt.

homemade sauce (I made a lot of it so we can use it for a number of purposes)

cheese, salami, olives, onions, peppers and garlic

Your dinner sounds wonderful!

We're eating on the cheap these days. Our vehicle is out of commission and it's going to cost some money to fix it. Besides the cost, we don't have a vehicle to get to the store.

I'm being tasked to use what's in the freezer and the larder.

I'm running out of fresh food.

Tomorrow may be salmon cakes using canned salmon. We'll see.

Elbow macaroni, two baked chicken breasts (shredded), 10 oz jar of green olives and pimentos (including liquid), two green apples (cubed), and less than 1/2 cup of Hellman's mayonnaise.

used zucchini for the noodles sliced thin
homemade meat sauce
lots of ricotta n mozzarell
it was very good ... garlic knots to soak up
sauce ...

They also have leek and other flavours but the mushroom with white wine is wonderful.

I found some dried mushrooms and pearled barley in mine, and made a soup with them. It's okay, but lacks some "oomph". Not sure what it needs.
