What's for Dinner, Sat., Dec. 22, 2018

It is deserted out! Hardly a soul on the roads! I went to the store to get empanada discs. But now I don't think I will make them because I still have too much work to do.

So instead I will have chicken wings that a friend brought me! Yum! These are best chicken wings.

For dessert, cup of orange spice tea and a gingerbread cookie with a little whipped cream on top.

It's tomato based, looking at the color of broth. Garlic naan. I'm not enthused about cooking today.

We tend to make too much food when we cook. The remainders are put into storage containers and put in the freezer. Usually, we label them with masking tape but every now and then (usually my fault) something gets put in there unmarked. Occasionally, the tape falls off.

We know it was good food but we aren't sure what it is until it thaws!

We stayed at the mountain house last night even though be both had to work at 8:45 in NYC. We left at 5:15 and about two minutes into the drive, I asked, "What should we do for dinner?"

Hilarity ensued.

Ultimately, we agreed to order sushi because we both had to work and afterwards, I had to travel to Long Island and back, (too much driving for one day).

Amazingly, we already had a bottle of saki!

Kidding. Keeping it simple tonight: roasted spaghetti squash, red sauce, salad.

But my salads this week have been extra delicious: my local co-op has Buddha's hands, a relative of the lemon with a sweet pith. There's no pulp, just skin and pith. But the pith isn't bitter at all. So I've been grating it into my salads, adding a sweet/lemony/lavender flavor. If you ever see Buddha's hands, buy one! You won't be sorry.

there are numerous Asian markets around here that I'll bet stock it. I'm gonna' check next time I am by one.

Do you peel it before you grate it?

But they're only in season another month.

They're pricey--about $10 at my co-op, and more online--but you only need a little bit at a time and they last a month in the fridge.
