Related: About this forumI need to make banana bread today...
...but my bananas are not aged for flavor, as usually is the case.
What do you think would happen if I microwaved them for a minute or two?
Would that approximate the natural ripening process?

(31,513 posts)Takes 20-25 minutes. Line the pan with foil first. Let them cool before mashing them. It really enhances the flavor.
I've never tried the microwave.

(2,674 posts)Just like you described. I use the roasted bananas for cake filling. Cool them, peel and mash. Add some sugar and a few tablespoons dark rum. I usually make yellow cake in three layers, finish with the banana filling and whipped cream for frosting. A cream cheese frosting would be good too. Haven't made this cake in a while, but think I will, maybe for Yew Year's day.
I am committed to make pecan pie, apple cobbler and poppy seed pound cake for the Christmas family blow out, will be baking all day tomorrow.

(6,583 posts)Problem is sometimes I get 2-3 bunches at a time & then I have 60-70 bananas to use.
When that happens I freeze them & either eat them frozen (a treat in the summer heat) or make protein shakes with frozen banana, vanilla almond milk, & vanilla protein powder.
