What's for Dinner, Fri., Dec. 28, 2018

Lamb vegetable soup. I'm going to make more corn muffins with hot peppers, scallions, and cheddar cheese in them.

Fruit salad. Blackberries, Asian pear, and apple chopped up and served with spinach. I'll use my old standby of Marie's coleslaw dressing, and put chopped, toasted almonds over the top. I dilute the dressing with milk because it's too rich for my tastes the way it comes in the bottle.

Dessert. I have this new lazy way to make "hot chocolate." I heat up a cup of milk in the micro, and then accompany it with a small-size 3 Musketeer bar. Have them in tandem. It's quite delicious and very relaxing. Of course, all sweets go to the curb as of Jan. 2.

We had a lot of steak left over from last night so we're making steak salads with Romaine and baby spinach. Red onion, cherry tomatoes and half an avocado. Balsamic vinaigrette. Fresh bread from a local bakery. We're in the midst of a blood-fight Scrabble competition with one another so we'll have more egg nog and brandy during the battle.

I like your observation about Marie's dressings. I love them, especially the bleu cheese, but they're so rich that I use them sparingly. I'll have to try your method of diluting them. Thanks, NJCher!

But the sauce for this one uses an addition of oyster sauce. And unlike frying the cornstarch covered tofu cubes, I'll bake these on a parchment sheet to lessen the fat.

It is not usually good this time of year. But this was delicious...from the USA somewhere. I made chocolate chip cookies for dessert and it was the first time they tasted right...gluten free cookies. I was so psyched. I have to relearn baking because I am a celiac. This was my first real success with cookies. I can also bake a pineapple upside down cake (hubs favorite).

Eating various cold leftovers - cleaning up our excesses

Gouda cheese
Smoked salmon with sour cream and Tabasco
Mustard potato salad
various crackers

Next course to be determined, but what I have in mind is
berries, clementine, banana with plain yogurt (or cottage cheese - got to look at those dates!)

Tea and cookies later

FLFC is snoozing with TJ who goes to work tonight. He will request burger, but I'm determined that he start eating some his dog food. I'm sure there will be a discussion, but I'm not sure who will prevail.

The Kevin which is a pumpkin sauce. It is so good! I add artichoke, red onion, bacon and parm to the base pizza. The fig basalmic glaze is the boss that finishes this just right.

Is "The Kevin" a pumpkin sauce you buy or make? I have all the rest of the ingredients including the balsamic glaze, so I could make it today, I'm thinking. Or tomorrow.

Ummm, sounds so good.

I think the sauce is literally just pureed pumpkin. I am always up for something new and they offered this in the fall. I love it because it is so different! I will order it as long as they are offering. Lol

See chef inspired at the bottom for the base topping ingredients. This pizza place is like a subway style ordering set up. Can add your ingred as the pizza goes along the choices. Real thin crust cooks up fast in their super hot ovens. Not wood fired but still real good.

if only for good ideas for pizzas! Lucky you to have one near you; I checked for NJ and no Mod Pizza. They are a good sized chain and I have never heard of them.

Thanks for the clarification on The Kevin. It's on my agenda for tomorrow.
