I am looking for guidance on a vegetarian keto diet.

Looking for vegetarian keto diet information
I have slowly moved to a vegetarian diet-I eat cheese, eggs, milk, tuna & occasional salmon. I am also aware that my go to curries are based on sweet potatoes, chick peas and lentils; tasty in a coconut milk base, but still higher in carbs then I'd like. I'm looking for info regarding a vegetarian based keto diet. Some websites are 'yeah tofu is okay', others are 'no tofu'.

We bought a "Paleo" brand pancake/waffle mix at Costco just to give it a try. The texture is lighter than a regular pancake, but we dumped a pint or so of blueberries and made a double batch. The mix held the fruit together and it made a very tasty breakfast. I have to be gluten free, so that's how I came across it.

And I suggest you look at carb counts on your ingredients. Although all cauliflower is going to be the same, your tofu might vary (since it's manmade). Also be aware that you can subtract fiber from carbs. Great low carb veggies to consider are broccoli, zucchini, spinach, cabbage, Brussels sprouts, cauli, green beans. Go easy on the onion-garlic family and carrots. Say adios to the peas, for sure.
