Looking for a great tasting but easy and quick vegetarian recipe?

Then look no further!

I just returned from a retreat with vegetarian food and was introduced to mushroom stroganoff. I found a recipe online, https://www.bbcgoodfood.com/recipes/1898646/mushroom-stroganoff, and thought it was so good and so easy to make that I wanted to share it.
I substituted Greek yogurt and eliminated the Worcestershire sauce and it turned out delicious.

It's vegetarian & I think it adds a similar flavor. We have veg stroganoff every couple of weeks.

Instead of soy sauce I use A-1 sauce. Tofutti Sour Supreme is easy to find where I live. For the no-beef bouillon I use Better Than Bouillon vegetarian no beef base. They make a no-chicken base, too & their vegetable base is excellent, too.

more traditional dipping sauce is dashi (but omit the dried bonito-use just kombu,) soy sauce and mirin..

then grated daikon, ginger and finely sliced green onion

The photo in this recipe is wrong-- it is age dofu... BUT that is also delicious.. roll the dofu squares in corn starch or potato starch and deep fry at about 257-300 tops until slightly golden..

I don't care what people say, I don't think tofu absorbs marinade - it's too full of water. So I bake it. I slice it into six sticks, lay them in an 8x8 pan & bake it at 350° for about an hour. The last 30 minutes of baking, every 10 minutes I brush it with seasoning - soy sauce, Bragg's amino's, BBQ sauce, whatever. Once it's cool we dice it into cubes & add it to whatever we're eating. You can bake it until it's as dry as jerky.

That was in a water bath, drained it, under a weight, wrapped on paper towels, now it's in the freezer. Tomorrow I'll take it out and bake it for a meatless monday meal, something like this tomorrow STICKY GINGER SESAME TOFU AND VEGGIES

Carrots, celery-root, parsley-root, potatoes, pumpkin, onion, paprika, eggplant, garlic... all of it cleaned, peeled and cut no bigger than 1 inch.

Mix in a bowl with a generous shot of olive-oil, salt and mediterranean spices (thyme, rosemary...).

Into a large pan, in the oven, 150°C for about 45 minutes.

Vegan Alfredo sauce made of cauliflour,cashews and a touch of miso wizzed up in a blender makes a great covering for plain old steamed veg. I get lots of quick ideas from these web sites also.

Nail the vegetarian to an oak board, season to taste, bake at 450 F for 45 minutes. Throw away the vegetarian and eat the oak board.

but mushroom was the favorite for both of us.
