What's for Dinner, Mon., Mar. 11, 2019

Posting early due to working late this evening.

The RG came into the office with a roast and asked me if that's what I wanted tonight, LOL! He was so proud of this roast he picked up at the WF. It was rather neatly tied up and with all that showy herb stuff.

So I said yes and we'll be having that with carrots, potatoes and onions.

I already made up a big salad--mesclun, tomatoes, Persian cucumbers, sliced red onion.

I'll be thinking on dessert--maybe pick something up on the way home.

an old family friend gave me a recipe and it is really delicious, but the amount of butter is...

Railroad Bob's Pappardelle, tomato, pancetta

6 plum tomatoes (canned works fine)
5 oz pancetta slices
2 dried hot chiles
3 and 1/2 oz Parmesan
10 !!!! TBS unsalted butter (you can use less, it is still good)
2/3 cup heavy cream
11 oz egg pappardelle

peel tomatoes, remove seeds, roughly chop. cut pancetta into 3/4 inch pieces, crumble chiles, and grate cheese.
melt butter in thick-bottomed pan, add pancetta and chile. gently cook until the pancetta begins to color. add tomato, season and gook gently for 10 minutes. add cream and cook for 10 minutes longer. cook pappardelle in boiling salted water until al dente. drain and add to the sauce, stir in half the Parmesan. serve with remaining Parmesan.



maybe some healthy salad to go with!

7. This recipe is torture...I can't eat dairy or pasta...although I could use gluten free pasta...

but I can't think of a substitute for the rest of it...enjoy an extra serving for me!

I did enjoy it, wanted to have it while it was still winter-ish. LOL not an every day, week, or even month recipe!

9. It sounds so good. May try it with 'buttery sticks' which are pretty good and lactaid

free milk with extra fat. I am craving this sort of food. Thanks for sharing.

10. for the fat, I wonder if you couldn't just go with olive oil?

the cream might be the harder thing to replace, though commercial products would use cornstarch or that kind of thickener.
