Fish tacos with chipotle cream. I'm using sole. The usual for the toppings: cabbage, avocado. Instead of a tortilla, though, I'm using my low-carb garden wraps.
For a salad, the RG has asked me to duplicate the one I made with my fresh garden greens. This is the one that has chopped apple, cucumber, celery (again, garden, so it tastes unlike anything from the store). Top it with walnuts. I'm using only 2 tsp of blue cheese for the dressing on each salad, so it's very light. I've decided I like just a little dressing. Plus it's great for the calorie count!
Dessert will be chamomille tea and a few TJ vanilla wafer cookies.

(38,456 posts)When I made the stuffed eggplant a couple of weeks ago, I had stuffing left over so I froze it. I thawed it earlier today.
I made a simple marinara, stuffed the peppers and put the peppers in the marinara. The whole thing went into the oven with some cut-up leftover steak from last night, covered. I'll melt some mozzarella on top near the end.
Planning on serving everything over spaghetti.
There's a navel orange I'm eying for dessert.

(5,580 posts)I bought a marinated breast from the market. Chopped it up, cooked in sesame oil and made my own sauce. Served over jasmine rice. Hot green tea.
Have enough leftover for lunch tomorrow. Makes me happy.

Were reducing our meat intake because the world is basically on fire. So its becoming a treat when we have red meat or pork.
Got busted for using soy crumbles over the weekend- Ive been doing so for months and was sneaky, they had no clue!

had it with some leftover flour tortillas that I brushed with butter and olive oil and sprinkled with garlic salt, baked till chewy with some crispy edge.
