Meatloaf

Ingredients for Meatloaf
2 pounds Ground Beef @ 85%
1 Egg
1/2 cup Breadcrumbs
1 cup Diced Onion, About 1/2 a large onion
1 teaspoon Minced Garlic
1 teaspoon Italian Seasoning
1 teaspoon Ground Black Pepper
1 1/2 teaspoons Salt
2 tablespoons Milk
2 tablespoons Ketchup
2 tablespoons A1 Steak Sauce.

For the Glaze
3 tablespoons Ketchup
3 tablespoons A1 Steak Sauce

Directions
Lightly mix all the bread crumbs, onion, garlic, Italian seasoning, ground pepper, salt, milk, 2 tablespoons ketchup and 2 tablespoons steak sauce together in a large mixing bowl.
Divide the mixture in half, form each half into a loaf, and place onto a baking pan lined with aluminum foil.
Bake at 375°F for 50-60 minutes, or until done. About 10 minutes before your meatloaf is finished cooking, mix together the remaining ketchup and steak sauce for the glaze and brush over the meatloaf.
You can check it with an instant thermometer. When the internal temperature is 155 degrees F, take it out of the oven and let it rest for a few minutes.

1. A1 is just ketchup with Worcestershire sauce.

I would just slightly up the ketchup and use worcestershire.

Pretty much the same way I make meatloaf, though. Except my wife is lactose intolerant and has an egg allergy, so I use ground flax in place of the egg, and usually beer in place of the milk (although sometimes I use fresh coconut milk).

Brings back memories. She'd serve baked potatoes and a salad with it. The next day there would be meatloaf sandwiches for lunch.

3. Here is my Meatloaf Recipe......

1 1/2 pounds lean Ground beef
1 pound Hot Italian ground sausage
3 to 4 eggs
3/4 to 1 cup Italian Bread crumbs
2/3 cup Grey Poupon Mustard(Must be Grey Poupon)
2/3 cup Ketchup
2/3 cup finely chopped onions
2 tablespoons finely chopped garlic
3 tbsp. Italian seasonings
3/4 cup shredded hash browns(optional)


Blend all ingredients in a large bowl until well mixed. Mold into a baking dish. Bake for 1 hr. 15 minutes at 350 degrees. Let cool 5 minutes before slicing. (This is so good, one can eat the whole thing.) Makes great left overs and sandwhiches.

The secret IMO is the cooking technique - bake covered in foil, then uncover, add glaze and bake a bit more. A moist and tender meatloaf while being thoroughly “done” (pink ground beef makes me gag). DH used to complain that I burned meatloaf, now this recipe is one of his favorite Sunday dinners.

1/2 cup bread crumbs, 1/2 tsp yellow mustard, 1.5 tsp brown sugar
I usually make it with 1 lb ground beef, a regular size can of soup and about 1/3 cup chopped onions. Cook time for smaller loaf 1 hour covered, 15 min. uncovered, add glaze and cook another 15 min. If you make it let me know how it turns out!
