What's for Dinner, Fri., Aug. 2, 2019

Skipping dinner tonight because of an hours-long lunch from which I just returned: it was an end-of-the summer semester celebration where our department gets together at a restaurant in the town where the university is located.

First we had appetizers: Charcuterie (spicy soppressata, finocchiona and cacciatorino), salad of mixed greens, fried fennel, cheese plate with three types of cheeses plus lavender honey to dip it in; also small bread slices.

The appetizer was whatever you put in for and mine was "Cast Iron Dutch Country Half Chicken Scarpariello with Charred Rapini."

Then the desserts. OMD. Baked in an individual cast iron pan, blueberry crumble with ice cream on top. Then there was ricotta cheesecake with ladyfinger crumbs, fresh berries and blueberry sauce. Plates of cookies. Espressos and coffee; tea, whatever you wanted.

-bourbon
- club soda
-SPEARMINT

8. steamed trout

-wash and pat dry
-put a little shaoxing wine in side and outside (or sherry)
- rub inside and out with salt
- put sliced ginger and a few 1"-2" pieces of scallion inside

-let sit 30 minutes

I use a 14" wok to steam but-- whatever--
-put 3 pieces of 3" scallion on a plate-to hold the trout
-put water in wok - or pan
- I then put a wok ring in the wok to hold the plate
-put plate in wok and cover and steam for 15 minutes
- take fish out
-remove scallion and ginger from inside
-transfer fish to clean plate
- cover top of fish with thin slivers of ginger and scallion
- heat 2-3 tbls of peanut oil till very hot
-carefully pour over the trout -sizzle sizzle..
-pour over a mixture of 3-4 tbls soy sauce and 1 tsp water

serve...

before marinating w Shaoxing wine and salt, make three diagonal slices on each side of the fish to let the wine and salt in

also-- gently smash the scallion pieces that will go inside the trout to release the flavor

it's all much easier than it sounds... LOL

cooked fillets before, the Fish Lady say it is always fresher so I am going to do it and will post how it turns out.

So after you master THAT technique, you can try Pixian Douban Yu - Fish In Chili bean Sauce.. a great dish from Sichuan.. although a bit more complicated.

We moved furniture around so and cleaned so ordered Hawaiian pizza...gluten free for me...regular for hubs...big salad and watermelon for desert

so that's what he got. Nothing very fancy--toasted sesame seed bun, mayo, lettuce and tomato. Crinkle fries. Bread and butter pickles.

I didn't defrost anything, and I don't have much ambition, so I may not bother with to much for myself. There's a lot of fruit in the house, and there's some frozen pizzas. There's also some hot dogs, and I think Al is bringing home some hotdog buns.

A steak that TJ cooked when I was asleep last night. It looks like a NY strip.
Sweet potato.
Once I've eaten that I'll chop up a small tomato just in from the garden and see what I have to go with it.

FLFC stayed in bed when TJ got up to go to work. I'll save him a piece of steak. He had his cheez burgrr slider this afternoon so he may not be hungry when he gets up.
