What's for Dinner, Thurs., Aug. 8, 2019

Starting off with a salmon salad roll-up. Flaked salmon which has been grilled, tomato, chopped celery, onion, and a little mayo. Twist of lemon; then I'll put it in an ancient grains wrap.

Next up is a cold vegetable plate with this fabulous glazed tofu I bought at WF. It was so good I went back for more for tonight. (The RG is in Manhattan for a week, so I'm on my own.) It has grill marks and the most delicious orange glaze. Along with that will be chopped cauliflower, sliced poblano, cucumber slices, and sliced fennel. I'll have a dip or two on the plate as well.

The entree is square of macaroni and noodles which I will pan fry in the cast iron skillet. It gets crispy on the outside and is ever so good this way.

Dessert is watermelon.

Cherry kombucha to drink.

If we have dessert, it will probably be a homemade orange juice popsicle.
