serve on crusty garlic toast. Add some cheese and wine. Great for a snack or light lunch.

or, if you don't have basil, squeeze some of that stuff out of a tube, drizzle with EVOO and sprinkle with balsamic vinegar. Lightly dust with crushed red pepper flakes. Let sit for about 1/2 hour if you can stand it.

Grilled American cheese and tomato sandwiches. Peel it open after it's nicely browned and slather mayo all over. Yummy!

I can pick them. We use them in all kinds of ways. The other day I had so many I threw some in the dehydrator and later made spaghetti sauce with fresh, dried tomatoes thrown in. It was really, really good. Today I plan to add them to a Mexican salad that usually doesn't call for them and we'll have them for lunch one way or another.

Absolutely simplest to prepare vegetable side:

Cut tomato in half horizontally
Place cut side up in makeshift tin foil "tray".
Drizzle with olive oil
Sea salt
Sprinkle with cut basil
Top with parm or goat cheese
Bake low for 10 min (just to warm through)
Take out and crank broiler up
Broil til cheese melts and turns golden

with basil and olive oil. It goes under the broiler with the oven rack in the center of the oven. I throw on cheese at the end. When I have as many tomatoes as I do now I also slice the tops off, put seasoned bread crumbs and melted butter on the top and bake them along with whatever I've got in the oven. They come out mushy and delicious.

My favorite sandwich? Toast, tomatoes, a little salt and pepper! Simple but delicious.
