I'm asking for something with charred eggplant because I have a craving.

steamed yellow squash and broccoli
I made Dad a shrimp stir-fry (carrots, broccoli, celery, yellow bell pepper, mushrooms, onions, garlic and ginger in a sauce) over rice.
TJ is off to work in a few hours so I guess it is leftovers.
Some of the crock pot beef in gravy looks good. Perhaps as an open face sandwich.
Fresh made coleslaw
A sweet potato in the microwave.
I've got local peaches, water melon, blue berries and bananas so some fruit after.

FLFC will share my beef and have some chicken that is de-boned and waiting for him.

(68,555 posts)Today it is salmon, mussels cooked with garlic,broth and lemon...splash of wine...corn and grapes...to lazy to cook the zucchini so the grapes are our fruit/veg. cookies for dessert with a latte.

I suppose it's not an allergy, as I don't get the swollen throat symptoms or anything like that. Just an intolerance, I guess.

yummy grilled eggplant side/appetizer for next time:
thinly slice eggplant, brush with olive oil. generously sprinkle both sides with salt, pepper, and lots of dry oregano. let sit while you prepare grill. cook until just charred and slices are mostly crispy. serve with sour cream. (even better if some dill is added, but not required)
