Related: About this forumPotato salad, I need a recipe.
Usual one is russets, onions, celery, Hellmans mayo, and a bit of mustard, paprika.
I'm feeling bored with that tasty mix.

Well, regardless of the details and how much the headlines matched the factual record, the restaurant in question was Wursthall in San Mateo, CA. And they make a potato salad which is in the same universe as this recipe (as opposed the the American-style egg- and mayo- containing ones).

(31,483 posts)to a lot of different foods. She really enjoyed the tangy flavor of this dish compared to the creamy, mayonnaise based recipe.
Also apropos of nothing, I helped her make egg rolls one day. She was really impressed at how neat mine looked since I'd never made them before. I told my son later it was all I could do to not pick them up and lick them to seal them at the end.

(15,805 posts)Use whatever ingredients you like in regular potato salad, but dice every thing very small. Add salt and lots of pepper. Then use a potato masher to smash everything to the desired consistency.
The dressing starts with a good mayo and the key ingredient is Creole Mustard. Zatarains makes it and a couple of lesser brands also. Creole Mustard is hot and spicy. Usually it's made with brown mustard and extra seeds, vinegar and a bit of horseradish mixed into a hot, spicy blend. There are plenty of recipes if you can't find Zatarains.
Remember to age this potato salad at least overnight to intensify and develop the flavors.

(22,114 posts)Take it from an old Southern woman who knows her way around potato salad, this stuff will knock your sox off. I will definitely spend the WW points to enjoy it.
Red potatoes, hard boiled eggs, celery seed, celery, bell pepper, scallions. Combination of mayo and mustard.
PS RHB also has the absolute best fried okra that can be found in all of Fort Worth.

(1,568 posts)Get a tub of premade mustard potato salad. I like the big square one from Sams.
Dump into a big bowl.
Get out your food processor and chop up about five hard-boiled eggs.
Dump them into the big bowl.
8 Oz of sour cream into - you guessed it- the big bowl.
Toss in a 1/2 teaspoon of garlic powder
Toss in two tablespoons of dill
Wash your hands and then squish that shit together.
Best potato salad ever.

(50,168 posts)I make a dressing of mayo, a little mustard, a little sour cream, a spoonful of sweet relish, salt, pepper and a hefty shake of McCormack's Salad Supreme seasoning. I top it with slice cucumber and tomatoes.

bacon if I am in the mood
mayo and mustard, use as little as possible.
Here is my trick which makes mine a bit different: cut up the potatoes and steam them! I cook them until a sharp knife will pierce them. Red potatoes stay pretty firm, but you don't want them to be mushy.
Do this ahead of time so they get good and cool before you mix everything up. Steaming brings out a different flavor and you don't rinse off the vitamins in the boiling water. I never peel them either.

(14,782 posts)I've never eaten a "potato salad" with either of those ingredients (which are totally acceptable by themselves or in other situations -- I have no blanket objection to them) which wasn't "unfortunate" at best.

1/4 cup olive oil
1-1/2 tsp. kosher salt
1-1/2 tsp. freshly ground black pepper
1/4 cup red wine vinegar
2 T. rice wine vinegar
2 T. Pommery mustard (you can substitute a whole-grain, spicy mustard)
2 T. Dijon mustard
2 cups olive oil
1-1/2 tsp. chopped chives
1-1/2 tsp. chopped basil
1 lb. sliced Vidalia onions, grilled
1/2 cup sun-dried tomatoes, reconstituted in equal amounts of balsamic vinegar, red wine, and water.
Toss small whole red potatoes in the 1/4 cup olive oil, the kosher salt, and the pepper. Roast in a 400 degree oven just until done. Mix the vinegars and mustards; whisk in the olive oil and the herbs. When the potatoes are cool, slice them and toss them with the dressing, the grilled onions, and the sun-dried tomatoes. Add salt and pepper to taste. Serve at room temperature.
This is a nice change, and we do love it!
