What's for Dinner, Wed., Sept. 25, 2019

Posting early due to working late.

We have a negotiations meeting with our college and afterward the union negotiations committee is going out. We always go to the same place: Olive Garden. I know the OG is the subject of many longstanding jokes at DU, but this particular one is run well and actually serves good food.

We always order the same thing. It will be seafood stuffed mushrooms and shrimp fritta for an appetizer and salmon piccata for an entree'.
I love their lemon cake for dessert, so I'm sure I'll order that if I can.

Homemade oatmeal cream pies for dessert.

I’m doing chicken tacos and fajitas as well soft and hard shells sour cream cheese salsa ,our two teenage sons will clean up yours and are leftovers congratulations on the baby.

for a long time. I remember an Angel Hair pasta with tomatoes and basil. Capellini Pomodoro - light and not bad.

Ingredients
2 tsp olive oil or vegan butter divided
2 cloves garlic minced
1 tsp minced ginger
1 green chili chopped (optional)
1/2 cup (80 g) chopped onion
1/4 tsp (0.25 tsp) cumin powder
1/2 to 3/4 tsp turmeric powder
1/4 tsp (0.25 tsp) fenugreek seeds or powder
1/4 tsp (0.25 tsp) cardamom powder
1/4 tsp (0.25 tsp) cinnamon powder
1/8 tsp (0.13 tsp) cloves powder
a generous dash of black pepper
3/4 cup (96 g) sliced carrots
2 medium potatoes chopped,*** I'm using a sweet potato 1.5 loaded cups
1/2 (0.5 ) head of cabbage finely chopped***I have a bag of pre shredded cabbage.
1/2 tsp (0.5 tsp) salt
Instructions
In a large skillet, add 1 tsp oil and heat at medium-low. Once hot, Add garlic, ginger, chili, and onion. Mix, cook for 4 minutes.
Add the cumin, turmeric, fenugreek seeds, cardamom, cinnamon, cloves and black pepper. Mix and cook for 3 minutes to infuse the oil and to continue cooking the onion to golden.
Add the carrots, potato and mix well. Add cabbage and 1/4 tsp salt. Mix well, cover and cook for 15 minutes. Stir once in between.
Add 1/4 tsp or more salt, and 1 tsp olive oil. Mix in. Deglaze at this time with water if needed Cover and Cook for another 15 minutes or until the potatoes are tender. *
Serve hot with Ethiopian flat bread Injera

Maybe some hot naan as well

cakes, pies, cookies... good stuff. I think the single best dessert I ever ate was at a fancy restaurant in Cambridge, MA (Rialto)--it was a lemon crème brulee served w/ fresh raspberries and a shortbread cookie.

Tonight we're having pork chops breaded (bread crumbs and Ranch seasoning) and baked, baked potato w/ sour cream, steamed green beans and sliced tomato.

Dad and sis had cheeseburgers w/ all the fixings, corn on the cob and sliced cucumbers.

Yakima grown Honeycrisp - very proud of myself for being able to cut it with one hand! I currently have a badly broken wrist - thank you for sharp knives !

A Chinese restaurant in Kenmore Washington where a little man stands behind the glass and makes fresh noodles every day. ...so freaking awesome!!
the dishes are huge, the price is reasonable! I can never eat it all.I will go running there anytime someone wants to go!!

Today I had mixed chow mein -one of the lunch specials, but the beef chow mein is out of this world !
