Roasted Peach & Mint Ice Cream

(I haven't tried this recipe. I don't even know if I'd like the taste. But I had to share ! )

Here’s how this recipe came about. I love mint ice cream, I love peach ice cream, and I love peaches and mint together. I also think roasted peaches are so incredibly delicious in that their flavor intensifies and any butter you add gets browned and nutty. I thought, why not combine these ideas and make roasted peach and mint ice cream? I did, and it’s so, so good. The mint and roasted peaches are in perfect balance -- with the mint providing a fresh cooling effect to the rich caramel notes of the roasted peaches.

--A few notes: I used spearmint as it’s what I grow in my backyard and the type of mint readily available in grocery stores. If you can find peppermint or black mint (available at farmer’s markets in the summer), they'd be particularly lovely here.

--I also updated the method of roasting the peaches, having just recently landed on a wonderful technique. (My original submission called for roasting the peaches in a hot oven for about 20 to 25 minutes with butter and honey.) First, you sprinkle sugar and a little salt on your halved peaches before roasting, which not only enhances their natural sweetness but also pulls out moisture to help them caramelize. (This step is also important for your ice cream -- pulling out excess moisture from your fruit ensures a good, creamy textured ice cream.) Then you pan-roast them in a cast-iron pan for a few minutes stove top before finishing in a hot oven. Pan-roasting versus roasting the peaches greatly intensifies their caramelization and flavor. They emerge beautifully browned and glistening with juice, perfectly destined for homemade ice cream. —EmilyC
