Simple Homemade Chili Hot Oil Recipe

This simple recipe is for a condiment you frequently see on the table at Chinese restaurants. It is dead easy, and makes a delicious flavoured oil for all sorts of uses. We fancy ours up rather a lot with a bunch of different spices, but of course you can make plain hot oil with just the mashed-up pepper pods. If you want it hotter, leave the seeds in!

As far as I'm concerned, the sesame seeds are non-negotiable, but you can easily make this your own by adding or removing spices. Ours bears a passing resemblance to the flavour profile of Chinese 5-spice powder, and those ground-up Szechuan peppercorns add a really nice floral note.

but I use Sichuan chili flakes instead of whole dried chilis. I also add sesame seeds and some crushed roasted peanuts.

The type of peppers you use, the different spices, the type of oil. There are as many recipes for this as there are kitchens in which to make it

We sometimes make this using peanut oil, which gives it that nice roasted peanut aroma. We'd be fine using roasted peanuts, so long as they aren't salted, because the salt will denature the oil. You don't want to add salt to this recipe at all.

Y'all just gave me a bucket load of ideas...... off to the kitchen..
On another note, what kind of spice grinder is that? I like the idea of all metal inside. Mine is just an old coffee mill that has plastic inside..

My neutral-ist oil was avocado oil... No thai chili, just chili de arbol. No seasame seeds but I did have some toasted seasame oil.. put that in at the end of the "cook".. all the rest of the ingredeants were available.. It came out fantastic!!! Thanks again for the idea...

Don't remember the brand, but it died shortly after this video. We replaced it with a Black and Decker coffee grinder, and its inside is all-metal, too. And it was under $20!
