Related: About this forumTried a new Veggie Chili recipe today....still in the crockpot for another hour or so
It's trying to snow here in the High Sierras and we are low on some easier food options, so I opened up the cabinets and went to town!
Usually, I will pull up a couple online recipes and just combine what I have and add what I think would work... so here's what's in the pot:
2 cans of beans drained - Kidney and Black
1 can fire roasted tomatoes not drained
Ortega chilis, drained and chopped (only used half of them tho)
about 3 TBS tomato paste
One chopped white onion
One chopped (de-seeded) Jalapeno
1 orange pepper
2 small sweet potatoes (par boiled till semi soft)
3 cloves garlic chopped
2 small carrots chopped
1/2 cup frozen corn
1/4 tsp? (a couple hearty pinches) cumin
1/4 tsp chili powder
dash curry
a few cilantro leaves (these had been frozen so they were hard to measure)
1/2 lime juice
liquid
1/4 bottle beer
1 cup broth ( I didn't have vegie broth so I had to use bouillon cubes dissolved in water)
I think that's about it

I'm thinking of cooking some crispy polenta slices from the tube in butter and topping it off with grated cheese and maybe some sour cream
I can't wait for the pot finish!!!

but when I stirred it it smelled great!
Best friend uses a recipe from Antoni and at the end you add a dash of chocolate (coco powder) and some brown sugar & apple cider vinegar...so I might try that
I think it adds richness and cuts the acidity

(13,359 posts)the last additions bring a level of dimension to the flavor and put the tomato in the background and the spices and peppers to the front
If I didnt post above...add 1 tbs pf apple cider vinegar
1/2 tbs sugar or brown sugar and a little cocoa (i literally used a hershey's kiss or two)
then turn down for the end of the simmer...
wow
I made fried polenta for a base, then dumped chili on top and cheese in between
